Dandelion Salad




Dandelions for lunch? Why yes!    They are so good for you! Today I put together a salad to take to work with me and threw a few dandelions on top of it.


I know what you’re thinking…weird…she’s eating weeds? These weeds that you see in your backyard offer an abundance of health benefits. Not only are they healthy for you but they are free!

Health Benefits:

  • A ton of vitamin K
  • The leaves have a lot of fiber
  • Rich in beta carotene
  • Helps balance blood sugar (great for diabetics)
  • Contains other vitamins such as vitamin C and E, folic acid and niacin
  • Great for cleansing your liver
  • Full of minerals

It’s that time of year when dandelions start growing in your yard. Instead of spraying your yard with chemicals to kill the dandelions, why not pick them and eat them? I caught myself looking for dandelions when I went out for a run the other day to put in my salad. I am now on a dandelion kick! You can keep them in the refrigerator for a day or two. If you don’t want to eat them in a salad you can also put them in a green smoothie or cook them like you would cook spinach. I would start out with just a few and see how your body handles it. Depending on where you are picking your dandelions, I would recommend washing them before eating them. The whole dandelion including the root is edible. You can even make coffee out of the roots. (I have yet to try this)

My Spring Dandelion Salad:
·         Handful of spinach
·         ½ cup of chopped apple
·         3 chopped strawberries
·         A couple Tbsp. of feta cheese
·         3 or 4 Tbsp. of walnuts
·         Small handful of dandelions
I mixed everything together and then sprinkled a few dandelions on top. This was my first time trying dandelions so I only used a few. I will definitely be putting more in my salad next time. I then topped my salad with vinaigrette dressing. Delicious!

You're right! That is pretty weird. I do not know if I am brave enough to try eating dandelions, but except for those your salad looks delicious! You've got some great articles here, Brittney!

Thank you! I thought they would be nasty and I was a little hesitant but I couldn't taste them with everything else in the salad.

I did that many years ago, and my husband complimented me on the salad for the first time ever. I also put some wild violet leaves in it. Have done this many times since. Want to destroy your dandelions? Eat them!

That's great! Next time I eat a dandelion salad I'll be including the leaves. I would like to learn more about edible plants that you find in your backyard!

Hey! I have a yard full of dandelions. The yard gets mowed and they are back up almost the next day. I am going to try this tomorrow. Randy said his great grandmother made dandelion wine. I think I have heard of dandelion tea. Thanks Brittney.

COOL! good thing you don't have a dog, but I'd be careful picking them right next to the greenway (for that same reason). hee, hee
